Egg Bhurji/Indian Style Scrambled Egg

Tasty Egg Bhurji (Scrambled egg) .

W_Bhurji3  Ingredients for Egg Bhurji:

  • Eggs :6 eggs large size
  • Onion : 1 big size or 2 small size finely chopped
  • Green chili : 1 chopped
  • Ginger : 1/2 inch chopped
  • Garlic : 2-3 cloves chopped
  • Fresh coriander : finely chopped
  • Red chili powder : 1 tsp
  • Salt : around 1tsp as per your taste
  • Oil :3 tbsp
  • Cumin seeds (Jeera) : 1 tbsp
  • Garam masala : 1/4 tsp

Recipe for Egg Bhurji:

  1. In a bowl crack 6 large eggs. Whisk them properly for 5-6 minutes.W_Bhurji4
  2. To the eggs add red chili powder and salt and whisk again so it mixes very well.W_Bhurji5
  3. In a flat heavy bottom pan take around 3 tbsp of oil.
  4. Let it heat on medium low flame and then add jerra(cumin seeds) and let them splutter.W_Bhurji6
  5. Once the aroma of cumin seeds starts releasing add chopped ginger and garlic.
  6. Saute for few seconds and add chopped onions.
  7. Keep on sauteing the onions .While sauteing add chopped green chili also.
  8. Cook the onions till they are tender and translucent.
  9. Now add the add the prepared egg liquid to the pan.
  10. As soon as the liquid starts to curd with the spatula start folding the curd on over themselves.W_Bhurji7
  11. Once all the curd is gathered together keeping spatula straight keep on cutting the curd so that small peices are formed.
  12. Lastly add garam masala and give it a nice mix.
  13. Cook for 1-2 more minute stirring and then turn off the flame.
  14. Add hand full of freshly chopped coriander leaves and our bhurji is ready to serve.
  15. Transfer in serving dish and enjoy with some bread slices or parathas or roti.

  • For those who don’t eat eggs , you can substitute eggs with paneer.
  • You can also add tomatoes in the eggs and then add the eggs that will give a nice tangy flavor to the bhurji.
